Thank you dmike25. The butcher paper will take longer as far as final cook because it is a bit harder coming out of the stall. I only use it when I use S&P because some rubs peel off when finished. I wrap at 165° and carry the brisket to 205° and check for probe tender. Pepper is measured by screen ...
