Grilled Lamb Chops

For those of you who have never had a lamb chop I would highly recommend you give it a try. The taste is wonderful and the meat is tender, somewhat like a beef filet mignon. You do have to cook the chop on the rare to medium rare side to keep that tenderness or you risk the meat getting tough as the level of "doneness" increases.

We found a pound of chops on sale. Interesting that the meat came from Australia.

Next I made a wet rub consisting of extra light olive oil, sea salt, fresh ground black pepper, and some fresh rosemary. A bit of fresh pressed garlic would be a good compliment also.


I seared both sides then covered the grill for a few moments to get the meat to about medium rare.

And that's about all there is to it.
