Atomic Buffalo Turds

20 Fresh Jalapenos (Pick the straighter ones when you choose, small to med sized)
20 Lit’l Smokies (flavor of your choice/1 package contains approximately 36 sausages)
1 Pkg. Cream Cheese (8 oz.)
2 Lbs. Bacon or 1 strip per ABT

Your favorite chile powder added to the cream cheese mixture for added heat (optional)

Using a sharp knife, remove the stem end of the jalapeno.

Remove the vein and seeds. There are tools for this you can find it on amazon works well. If not try a tea spoon.

Once the insides are clean, poke holes in the end of the jalapeno with a toothpick so the cheese doesn't come out of the top while smoking.

Add a lil cream cheese then a lil smokie and more cheese if needed.

With the smokies inserted in the ABT’s, wrap the bacon around the jalapeno and secure with a toothpick.

Place the ABT’s on a preheated smoker at 250 degrees and cook for approximately 2 hours or until done. check at 1,5 hours.

You can use brisket, pulled pork and other stuff instead of lil smokies.

Gotta love em. Try mixing some Try Me Tiger sauce in the cream cheese, enough to turn it pink and a light glaze of it on top of the bacon as a final glaze...

I prefer to cut my jalapeno's in half lengthwise. It is easier to get the seeds and white stuff out and gives a better meat-to-veggie ratio. I did a small batch a few months back and they were great as an appetizer. Toothpicks hold it all together and the cream cheese stays in place as long as they don't tip over. :lol:

Smoking a pork butt today and had almost everything needed for a few ABT's (missing cream cheese), so I used smoked pepper jack instead of the cream cheese. The pepper jack doesn't offer the "cooling" creamyness of the cream cheese so I would go back to cream cheese next time for sure, but it was still really good.

I had 3 extra pieces of bacon, so I just spiraled them and added a little pepper jack.
