I don't deviate much from year to year but my standard fare is hickory smoked turkey that I use a holiday brine on, sweet potato casserole, rice and giblet gravy, collard greens, turkey gravy for those squeamish about giblets, some sort of dressing, and of course pumpkin pie for dessert. A nice bottle of Pinot Noir to wash it all down.

Turkey is brining. Brine is: water, kosher salt,maple syrup, sage, rosemary, thyme, black pepper corns, garlic powder, onion powder and bay leaves. Brought it to a boil on the stove and boiled for half hour. Removed from the stove, added ice to cool mixture down to 50 degrees. Put turkey in a food safe marinating bag, poured the mixture over the top and added enough water to cover. Sealed the bag, put the cover on the bucket and its all sitting on the deck chillin' out.

Plan to pull it mid morning tomorrow. Plan to Spatchcock it, season it on the skin and under the skin. Let that set for a few hours and then into the Pit Boss at 350 using Hickory pellets.

Plan to use the backbone and neck on a stock pot with celery, carrots some mixture of herbs and spices this will be used to moisten the dressing.

Dressing will be Jimmy Dean sage sausage, seasoned croutons, onion, garlic, wild rice celery, mushrooms and butter.

Mashed potatoes, dinner rolls and a glass(es) if Balvenie Double Wood 12 year old Scotch or Weller bourbon...unless I can find a bottle of Belle Meade.

12lb turkey for the wife and I. The in-laws are taking a rain check due to China Flu...

Trying a turkey for the first time on the Egg. My wife is also doing a duck in the oven. All for 3 of us...LOL. My daughter and her family are hunkering down this year.

Of course, all the fixin's that go with the birds. The turkey will come out of the brine in the morning and dry for about 2 hours before hitting the pit.

Yukon, are you the same as on MNGT? Good to see you here...

Yes, hoping to find the same access to wise enthusiasts of a new area for me.

Sounds like you are on the same trajectory with waaaaay too much food. Good problem to have, I guess.

My son wanted to try roast duck, so...

And I had already planned on the turkey on the egg, so I guess we will be able to have leftover turkey sandwiches, turkey pot pie, duck stir-fry, turkey pancakes, duck stew, etc...
